SabaRaba's Serves Fresh, Authentic Flavors with Healthy Benefits

SabaRaba’s offers clean, healthy eating choices for its guests. The Mediterranean and Middle Eastern street food eatery serves dishes filled with multiple health benefits that provide nutrients necessary to maintain a healthy lifestyle, whether guests are strictly following the Mediterranean diet or simply looking to add more nutritious items to their meals.

“Mediterranean cuisine is rich in heart-healthy nutrients,” says Udi Hershkovitz, Atlanta restaurateur and owner of SabaRaba’s. “From the colorful, fresh vegetables to authentic spices, dips and flavorful proteins, we offer a balanced, nutritious menu. I created SabaRaba's in Atlanta to show that fast and convenient food can also be a very healthy way of eating.”

Whether guests visit the bright yellow shipping container in Sandy Springs or the brick-and-mortar location in Chamblee, SabaRaba’s has a menu that is predominantly plant-based, offering a variety of salads and proteins that can be served in a pita, a laffa, a flatbread or as a deconstructed plate. Key ingredients such as chickpeas, bulgur wheat, leafy greens, eggplant and olive oil feature antioxidants and anti-inflammatory properties. Vegetables in a rainbow of colors are cut fresh daily and tucked into a pita, or a laffa, and dressed for crunchy, refreshing salads.

Tahina, also called tahini, is made from ground sesame seeds and possesses anti-inflammatory benefits as well as healthy antioxidants. The tahina at SabaRaba’s is drizzled on the sabich pita or plate with roasted eggplant, hardboiled egg, hummus and cucumber. It even serves as a finishing touch to the shawarma fries.

Not all fats are bad, as noted in the Mediterranean diet requirements. A good source of powerful antioxidants and anti-inflammatory properties, heart-healthy olive oil has been known to prevent strokes and provide good, monounsaturated fats. To reap these benefits, guests can try the Israeli salad (with cucumbers, tomatoes, bell peppers and olive oil) or the tabouli salad (with bulgur wheat, cilantro, lemon and olive oil).

Hummus is an excellent source of protein, fiber, polyphenols and vitamins. According to the National Institutes of Health, raw or cooked chickpeas and hummus contain dietary bioactives such as phytic acid, sterols, tannins, carotenoids and other polyphenols such as isoflavones with benefits that may extend beyond basic nutrition requirements. The hummus at SabaRaba’s, a creamy blend of chickpeas, tahina, olive oil, lemon juice and garlic, is made fresh daily and is delicious folded into a wrap or as a dip for carrots, cucumbers and red and orange peppers. As a bonus, chickpeas are high in fiber and can help with digestion and lowering cholesterol.

Another way to enjoy the benefits of chickpeas is to order SabaRaba’s delicious, crunchy falafel. Even though it is fried to order, the falafel is hand scooped and made with nutrient-dense, quality ingredients high in antioxidants and can be used in a deconstructed plate with Israeli salad, pita and hummus.

Delicious and refreshing tzatziki dip is yogurt-based, possessing probiotics for gut health and friendly bacteria for the digestive system. Freshly made with strained yogurt, shredded cucumber, olive oil and lemon juice, tzatziki offers probiotics that are known to improve some mental health conditions and provide heart-healthy benefits. It may even reduce the severity of certain allergies and boost immune systems.

“At SabaRaba’s, we focus on serving fresh, whole foods,” says Hershkovitz. “It’s all very energizing food, which makes it easier to stay active."
