Jonathan St. Hilaire Named Director of Operations for Big Table Restaurants

Big Table Restaurants, the Atlanta-based hospitality company behind HOBNOB Neighborhood Tavern, Lazy Llama Cantina and the upcoming Cattle Shed Wine & Steak Bar, has named Jonathan St. Hilaire as its director of operations. St. Hilaire, who previously served as the company’s culinary director, is now tasked with overseeing both back-of-house and front-of-house operations for all of Big Table’s concepts.

“We’re extremely proud to have Jonathan move into this role,” says Sean Yeremyan, co-owner of Big Table Restaurants. “Jonathan knows the Atlanta restaurant scene inside and out. We have some big plans for the coming year, and his invaluable experience as a chef and a business owner make him the perfect choice to guide Big Table through such an exciting time for our company.”

First up for St. Hilaire is the eagerly anticipated February opening of HOBNOB’s newest location in Atlantic Station. “That’s a huge undertaking in itself,” Hilaire says. “And then six weeks later, we have Cattle Shed opening up. It’s a challenge, but that’s what makes it fun.”

An Atlanta hospitality veteran known for stints at such institutions as TROIS and Woodfire Grill and owner of a bakery, St. Hilaire is particularly excited to introduce diners to Cattle Shed in late March. “This is the company’s first take on moving into farm-to-table, which is a huge part of my background and something I hold very dear to my heart,” he says. “I’m ecstatic about the chef we’ve hired, Colin McGowan. Halcyon is a great place to open what I hope will be the first of many locations. I think we’re going to make a huge mark and bring a really fun concept to life.”

With two high-profile openings on the horizon, St. Hilaire’s attention also is focused on such day-to-day concerns as maintaining high service standards, constantly reviewing safety protocols and moving Big Table’s concepts forward.

“My job is really to focus on the brands—HOBNOB, Cattle Shed and Lazy Llama,” he says. “Even at a time like this, people want to go out and have a good time and enjoy some affordable, well-executed comfort food. Concepts like HOBNOB and Lazy Llama are places they can look at and say ‘Hey, it’s fun, it fits my budget, and it’s good for the kids.’ We’re extremely strong in those areas, and my goal is to build on those strengths and grow these concepts to make them the best they can be during these crazy times we’re going through right now, and into the future.”
