SabaRaba's Authentic Israeli Menu Makes Sticking to a Healthier Diet Easier
Longtime Atlanta restaurateur Udi Hershkovitz recently introduced Atlantans to a true Israeli street food experience with the opening of his latest restaurant SabaRaba's. The Sandy Springs restaurant is delivering health-conscious meals on the go. SabaRaba’s operates out of a shipping container located at the Parkside Shops that replicates the feeling of a quick-service kiosk in Tel Aviv, offering guests fresh, authentic Mediterranean cuisine for lunch and dinner.
“I opened SabaRaba’s to introduce Atlanta to authentic Israeli flavors and the health benefits of Mediterranean cuisine,” says Hershkovitz. “Whether it’s our tabouli or Israeli chopped salad or our hummus, these fresh ingredients are heart-healthy foods that lower the risk of many diseases.”
Linked to long-term health benefits, the Mediterranean diet emphasizes healthy fats, fruits, vegetables, beans, nuts and whole grains and de-emphasizes red meat and dairy. This way of eating is inspired by the eating habits of people who live near the Mediterranean Sea.
SabaRaba’s menu is predominantly vegetarian and gluten free and offers a variety of salads and plant-based proteins that can be served in a pita, in a laffa flatbread or as a deconstructed plate. Key ingredients such as chickpeas, bulgur wheat, leafy greens, eggplant and olive oil feature antioxidants and anti-inflammatory properties. Plus, many menu items are Mediterranean diet approved, these include:
Falafel: ground chickpeas with fresh veggies and traditional spices, hand-scooped and fried to order
Israeli salad: cucumbers, tomatoes, yellow bell pepper, red onions, radishes, citrus, olive oil and parsley
Tabouli salad: bulgur wheat, cucumbers, radishes, red onions, parsley, yellow bell peppers, citrus, cilantro and olive oil
Market salad: tomatoes, cucumber, red onions, carrots, feta, green olives, hearts of palm, dates and house vinaigrette
Hummus: creamy blend of chickpeas, tahina, lemon juice and garlic that is made fresh daily
Grilled chicken plate: house-marinated chicken grilled to order and served with hummus, pita, Israeli salad and a side dish of choice
Sabich: grilled eggplant and boiled egg nestled inside a pita pocket with hummus, cucumbers, tomatoes, pickles and tahina
