Beverage director Jose Pereiro handcrafts these cocktails, and his dedication to his work shows. The new cocktails, made with ingredients inspired by the northern coast of Italy, include:

• Fancy Colada Spritz: Zacapa 23, Clement Select Barrel, Kalani Coconuts, citrus and carbonation

• Melone di Parma: Conniption gin, Bosscal mezcal, St. Germain, Melon cordial, honey and lime
