Feedel Bistro's Ethiopian, Eritrean Menu Expansion Excites Vegan Foodies

Feedel Bistro owners Tamar Telahun and her older brother Simon Gebru continue to serve up new and exciting East African dishes this summer as they transition the menu to focus on vegan, vegetarian and pescatarian options.

“Feedel Bistro’s authentic recipes range from cool, bright and spicy to warm and savory. We know our patrons will love these vegetarian offerings,” says Telahun. “Because the cuisine of Eritrea and Ethiopia is full of naturally vegan dishes, we will continue to transition the menu to be more focused on vegan, vegetarian and pescatarian choices in the coming months.”

One of the true staples of Ethiopian gastronomy is tibs, which is a versatile, culinary specialty. “We’ll take the traditional meat dish that is normally cut into cubes and substitute either tofu or chickpeas,” she adds. “While healthy, the dish will never be boring. We think our customers will love this vegetarian twist and discover its amazing flavor profiles.”

The stand-out restaurant will continue to serve popular menu specialties like the chef’s special salmon, baked and sauteed in a variety of herbs and spices with tomatoes, onions, garlic and jalapeños; and the ever-popular branzino, a whole grilled, lightly fried fish. These offerings are complemented by a selection of beverages including Eritrean and Ethiopian coffee, habesha kemem shai (traditional tea), Ethiopian beer and wine, fresh juices and domestic teas, coffees, beer, wine and handcrafted vegan cocktails.

The new, expanded menu includes:

  • Tofu tibs – cubed tofu sautéed onions, garlic, tomatoes and jalapeños, prepared mild, medium or spicy and served with a side portion of either red lentils, brown lentils or yellow split peas

  • Chickpea tibs – chickpeas, sautéed onions, garlic, turmeric and jalapeños served with a side portion of either red lentils, brown lentils or yellow split peas

  • Key sir (beetroot) salad – savory beetroot, carrots, potatoes, onion and jalapeños with homemade citrus dressing

  • Yedinich wot (potato stew) – steamed potatoes simmered in berbere spice sauce and seasoned with assorted traditional spices
